Great question! Science uses what’s known as repeatability. We make a prediction, we do an experiment, we record what happens and we draw conclusions from what we saw. This process is repeated again and again. Over time these theories are made and then tested by others. Some theories stand for a long time and others don’t. Rather than using ‘correct’ I would choose ‘provable’.

We don’t. Science is constantly evolving as our knowledge grows. What is “fact” now may one day be challenged by an experiment that produces unexplainable results – unexplainable by the old theory, but explainable by a new one!
